Organic Millet Linguine with Walnut and Purple Basil Pesto


One Pound Organic Millet Linguine
1 cup organic broccoli
1 cup organic spinach
1 cup halved organic tomatoes
   (cherry or grape)
1 dozen stemmed pepperoncinis,
   (seeded & sliced)

2 cups packed purple or green basil leaves
1/3 cup toasted walnuts
1 clove garlic
½ tsp lemon zest & juice
½ lime zest & juice
½ cup grated parmesan
1/8 cup extra virgin olive oil
1/8 cup canola oil
½ tsp sea salt

Preparation Instructions

1. Toss pesto with cooked pasta and a little reserved pasta cooking water so that pesto coats pasta. Fold in lightly steamed veggies.

Yields 8 servings
